Is there any instructions on how to renovate these labels to make them as colorful as they should be?

I think some people (including myself) have used the following with slight variation.
Polish the high spots with 800 (or finer) grit wet/dry sandpaper on a sanding block. Paint the plates with black spray paint. Once the paint is thoroughly dry hit the high spots again with the 800 grit sandpaper on a sanding block.

Hello,
I bought new labels.
The large plate for assigning labels is missing.
They are right on the dashboard.
I don't have the circular hole on the dashboard
I thought it was sealed, but there is no sign of it on the back
Is it possible that some M38s did not have this circular cutout?
For example, made in Canada?

The plates on the earlier M38's were screwed directly to the dash. It was with the later M38's where the data plates were riveted to a separate plate that was then screwed to the dash. This happened at serial number MC34347 (9/51- from Millers book). This plate covered the heater kit hole in the dash.

The hole was a requirement for a heater kit installation. Not all M38's came with that hole. The early M38's screwed each individual plate to the dash just right of the instrument cluster. The dataplate mounting plate was used on later M38s and placed in the same position. Yes it is mentioned when this change occurs in Ryan's book but it is also clearly shown in the M38 parts Manual ORD 9 SNL G-740 dated 1955 on page 338 ORD Part # 7412583.

No matter what I'm doing, I always know what I'm doing.
So far, anyway.
Doing it well is another matter.
I tend to trust pilots that have an equal number of take-offs and landings.
But that could be misplaced confidence.

I still have a question.
What kind of rivets should there be?
With a flat or semi-round head?
Steel or aluminum?

You do not say what serial number your M38 is but I see in your photos your data plates are fastened directly to the dash with 24 screws. This was the common practice up to sn MC34151. After MC34151 the individual plates were riveted to a support/mounting plate and the mount plate was attached to the dash with 4 screws.
Look closely at the referenced page 339 from the M38's parts manual ORD 9 SNL G-740 dated 1955. The type of rivets or screws as required are listed and described in great detail.

I have number 25359
That would fit the screws.
There is no picture in the instructions for the text.
So I wouldn't have discovered it myself.
So all that remains is to say thank you again!!!
